Dr Preeti, Baking soda is used to increase fermenting process of the dosa
batter. We may use soaked methi dana for the same purpose. Tadi or Kali is
got from the Nariyal Tree or Palm tree. It is also mixed in dosa batter to
ferment it as they have palm tree or nariyal trees grown in there homes.
